This coffee gift box is paired with Elipse and Nirvana from Deborah Estate, the first and second choices of the 2024 World Barista Championship, for the ultimate in flavour. A selection of ripe cherries is fermented in a sealed chamber for 50 hours, with regular nitrogen flushes to remove residual oxygen, create an oxygen-free environment and prolong the fermentation time in order to enhance the complexity of the flavours. Throughout the process, pH and temperature were strictly monitored to ensure that the fermentation was stable and within precise parameters. Elipse was then washed and dried in the shade on three tiers of drying racks designed by Deborah's owner, Jameson Savage, for 12 days to 11% moisture content, while Nirvana was sun-dried directly to retain a richer layer of fruit flavours.
